Slam’s Hot Stuff – 2014

This year’s version has a south American twist, with a good size bunch of fresh salsa, 1/2 clove of garlic, 1/2 teaspoon lime and fresh spring onion sprigs in every jar. Along with the salsa mix, garlic and diced tomatoes with habanero bits in the pickling sauce. This year’s version promises to be great for Mexican, Spanish, Thai, and Asian dishes. As well as having a unique flavor, for eating with beans, greens and other veggie servings.

– Makes 24, 8 ounce decorative glass containers

– Make sure to buy glass containers with labels, so that these can be given away as gifts.


A sea of Hot Peppers

  • 1/2 gallon WhiteHouse Apple Cider Vinegar

  • cilantro lime salsa mix for hot peppers

    New things in this year’s hot pepper batch, not in last year’s recipe.

  • 1/2 gallon seasoned mixing materials from 2013’s batch

  • 3/4 cup of pickling salt; … 

  • NO pickling lime, 

  • 1, 10 oz can of RO-TEL diced tomatoes with habanero’s

  • (no sugar this year)

  • 3-6 tablespoons honey

  • 1/3 jar minced garlic

  • 1 quart of water

  • 1 container of Hy Top pickling spice // contains: mustard seed, bay leaves, allspice, coriander, cassia, cloves, Ginger, black and red peppers.

  • 1, 1.06 oz. packet of Salsa Seasoning Mix

  • All the above boiled in a pot

Hot Peppers on fire

  1. Vegetables as below. Cut all pieces first… Then stuff in jars…

  2. 24 8 oz decorative canning jars

  3. Very healthy double sprig of fresh Cilantro in each jar

  4. 1/4 teaspoon olive oil directly in each jar

  5. 1/2 teaspoon of lime juice directly in each jar

  6. 48 little Thai Peppers

  7. 1/2 clove fresh garlic directly in each jar.

  8. 1 base of spring onion directly in each jar

  9. 24 misc. pepper pieces..

  10. 24 quarters of firm red tomato

  11. 24 small slices of vidalia onion

  12. 24 jalapeno peppers,

  13. 24 very small slivers of bhut jolokia or Trinidad Scorpion Pepper (1 in each jar)

  14. 48 orange habaneros – 2 each jar

  15. small cut sticks of banana pepper

Ladle boiling hot vinegar mix in jars.

Put lids on very tight.

Boil with water level over the top of the jars for at least 15 minutes.

Tong out the jars and put upside down until they seal or pop.

*There will also be about 1/2 gallon of seasoned vinegar left from y0ur boiling mix. I recommend you save this to put in your peppers next year or at least to season your food with. It is an excellent seasoning, to use in all kinds of dishes.
