Slam’s Hot Stuff – 2013
2013 Canning recipe
– Makes 24, 8 ounce decorative glass containers
– Make sure to buy glass containers with labels, so that these can be given away as gifts.

1/2 gallon + a little apple cider vinegar
-
3/4 cup of pickling salt; (full cup was too much )…
-
NO pickling lime, in the first batch this was a disaster
-
a small jar of sweet pickle relish
-
a cup of sugar
-
6 tablespoons honey
-
3 tablespoons olive oil
-
1/3 jar minced garlic
-
1 quart of water
-
small jar of sliced dill pickles and juice
-
1 & 1/2 container of Hy Top pickling spice // contains: mustard seed, bay leaves, allspice, coriander, cassia, cloves, Ginger, black and red peppers.

2 table-spoons crushed red peppers
-
All the above boiled in a pot

Vegetables as below. Cut all pieces first… Then stuff in jars…

24 8 oz decorative canning jars
-
24 short celery stalks
-
24 short carrot sticks
-
24 short cucumber sticks
-
24 mini chili peppers in bottom
-
24 slices of green tomatoe
-
24 slices of vidalia onion
-
24 jalapeno peppers, if small, 2 per jar
-
24 slivers of bhut jolokia or the like
-
24 habaneros or equal
-
24 cut sticks of hot banana pepper
-
24 cut pieces of squash
-
24 pieces of mixed hot peppers
-
put healthy sprig of fresh cilantro in every jar.
Ladle boiling hot vinegar mix in jars.
Put lids on very tight.
Boil with water level over the top of the jars for at least 15 minutes.
Tong out the jars and put upside down until they seal or pop.
